I 've tried few of Martha Stewart 's chocolate cakes & bookmarked A LOT but this recipe caught my eye amongst the others. Not only it’s chocolatey moist but with a lovely
sauce to go with it that makes it so festive & perfect for Christmas or the
New Year . Love the added ginger but not enough to my taste though . I should suggest adding a little more grated
ginger or some candied ginger to get that intense flavour that goes so well
with chocolate . I’ve used my Brioche
pan aka’ space ship’ mould to baked this cake .
It’s been awhile that I’ve not use this pan that looks like a space ship or what my baking buddy , Lena of Frozen Wings called it the Barbie skirt ! LOL Seriously, this bourbon sauce was simply amazing ! But my bourbon sauce was not as the same
color as Martha’s . I was chatting on
the phone when I was making this bourbon sauce & I accidentally took the
WRONG brown sugar . Instead of the compact
DARK brown sugar I’ve used the light brown sugar!!! Instead of drizzling the sauce all over the
cake I’ve poured ALL the warm sauce over it !! Well, never chat on the
phone & bake at the same time , bad idea indeed .LOL Nonetheless

Chocolate–Ginger
Cake With Bourbon Sauce (Martha Stewart)
Adapted
from Martha Stewart .Com
Ingredients:
½ cup
unsalted butter, softened + some for pan
½ cup
unsweetened cocoa powder
½ cup
unsulfured molasses
¾ cup light
brown sugar
2 large
eggs
¼ cup whole
milk
2 tsp
finely grated peeled fresh ginger
1 cup flour
¾ tsp
baking soda
½ tsp coarse salt
1 tsp
ground ginger
1 tsp
ground cinnamon
20cm Bundt
cake pan
For Bourbon
sauce
½ cup
unsalted butter
2 egg yolks
1 cup of
dark brown sugar
1 tsp
vanilla extract
¼ cup
bourbon
Directions:
1) Preheat
oven to 180°C & greased a 20 cm Bundt pan. Dust with cocoa powder & tap out the
excess .
2) In a
sauce pan, combine butter, brown sugar, molasses & ¼ cup of water over medium low heat. Stir till butter melted &
transfer it to a larger bowl. Let to cool for 5 mins.
3) Add
milk, eggs, & grated ginger into molasses mixture. Whisk to combine. Sift cocoa powder, salt, baking soda,
cinnamon , flour & ground ginger.
4) Fold in
gradually flour mixture into molasses mixture till well combined. ( There should be some lumps remaining). Pour batter into cake pan & bake for 30
mins. Let to cool on wire rack.
5) To make
the bourbon sauce : Place butter,egg yolks, brown sugar & bourbon in a
heatproof bowl set over a pan of simmering water. Whisk constantly till mixture
160degrees on a candy thermometer about 7 mins. Drizzle the sauce with a spoon
over the cake or pour the warm sauce over the cake liked I did. Serve while its
warm.
